These no-bake truffles feature a creamy pistachio cheesecake filling, perfect for a quick and irresistible dessert.


Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 cup pistachio pudding mix
  • 1/4 cup chopped pistachios
  • 1 teaspoon vanilla extract
  • 1 cup white chocolate chips, for coating

Instructions

  1. In a mixing bowl, beat the cream cheese until smooth.
  2. Add powdered sugar, pistachio pudding mix, chopped pistachios, and vanilla extract; mix well.
  3. Scoop the mixture into small balls and place on a baking sheet lined with parchment paper.
  4. Freeze the balls for 30 minutes.
  5. Melt white chocolate chips and dip each ball to coat, then refrigerate until set.
