Description

Delicate French macarons featuring a pistachio hue, filled with raspberry-infused silk buttercream and topped with jewel-like decorations.


Ingredients

  • 1 1/2 cups almond flour
  • 1 1/4 cups powdered sugar
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 1 teaspoon pistachio extract
  • 1/2 cup fresh raspberries (for filling)
  • 1 cup unsalted butter (softened)
  • 2 cups powdered sugar (for buttercream)
  • Food coloring (green for pistachio hue)
  • Edible jewels or sprinkles for topping

Instructions

  1. In a bowl, sift together almond flour and 1 1/4 cups powdered sugar.
  2. In a separate bowl, beat egg whites until foamy, then gradually add granulated sugar until stiff peaks form.
  3. Fold the dry ingredients into the egg whites, adding pistachio extract and a few drops of green food coloring.
  4. Pipe the mixture onto a baking sheet in small circles and let rest for 30 minutes.
  5. Preheat oven to 300Β°F and bake for 15-18 minutes.
  6. For the buttercream, beat butter until creamy, then add 2 cups powdered sugar and mashed raspberries.
  7. Once macarons are cooled, sandwich with buttercream and top with jewels.

Notes

Ensure egg whites are at room temperature for best results. Store in an airtight container.
