- 1 1/2 cups almond flour
- 1 1/4 cups powdered sugar
- 3 large egg whites
- 1/4 cup granulated sugar
- 1 teaspoon pistachio extract
- 1/2 cup fresh raspberries (for filling)
- 1 cup unsalted butter (softened)
- 2 cups powdered sugar (for buttercream)
- Food coloring (green for pistachio hue)
- Edible jewels or sprinkles for topping
Instructions
- In a bowl, sift together almond flour and 1 1/4 cups powdered sugar.
- In a separate bowl, beat egg whites until foamy, then gradually add granulated sugar until stiff peaks form.
- Fold the dry ingredients into the egg whites, adding pistachio extract and a few drops of green food coloring.
- Pipe the mixture onto a baking sheet in small circles and let rest for 30 minutes.
- Preheat oven to 300Β°F and bake for 15-18 minutes.
- For the buttercream, beat butter until creamy, then add 2 cups powdered sugar and mashed raspberries.
- Once macarons are cooled, sandwich with buttercream and top with jewels.
Notes
Ensure egg whites are at room temperature for best results. Store in an airtight container.
