Description

A comforting soup that captures the flavors of traditional potstickers in a warm, brothy bowl.


Ingredients

  • 1 tablespoon vegetable oil
  • 1 pound ground pork
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 4 cups chicken broth
  • 2 cups bok choy, chopped
  • 1 cup carrots, sliced
  • 1012 frozen potstickers
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the ground pork and cook until browned, breaking it up with a spoon.
  3. Stir in the garlic and ginger, cooking for another minute until fragrant.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the bok choy, carrots, and potstickers to the pot.
  6. Reduce heat and simmer for 10-15 minutes until vegetables are tender and potstickers are cooked through.
  7. Season with salt and pepper to taste.
  8. Garnish with sliced green onions before serving.

Notes

For a vegetarian version, substitute ground pork with tofu and use vegetable broth.
