A comforting soup that captures the flavors of traditional potstickers in a warm, brothy bowl.
Ingredients

- 1 tablespoon vegetable oil
- 1 pound ground pork
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 4 cups chicken broth
- 2 cups bok choy, chopped
- 1 cup carrots, sliced
- 10–12 frozen potstickers
- 2 green onions, sliced
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the ground pork and cook until browned, breaking it up with a spoon.
- Stir in the garlic and ginger, cooking for another minute until fragrant.
- Pour in the chicken broth and bring to a boil.
- Add the bok choy, carrots, and potstickers to the pot.
- Reduce heat and simmer for 10-15 minutes until vegetables are tender and potstickers are cooked through.
- Season with salt and pepper to taste.
- Garnish with sliced green onions before serving.
Notes
For a vegetarian version, substitute ground pork with tofu and use vegetable broth.
