Ingredients

  • 2 cups pumpkin, cubed

  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss pumpkin cubes with olive oil, salt, and pepper, then roast for 25 minutes until tender.
  3. Cook pasta according to package instructions.
