- 1 pound ground chicken
- 1 cup fresh cranberries
- 1 large egg
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup cranberry sauce for glaze
Instructions
- In a large bowl, combine ground chicken, cranberries, egg, breadcrumbs, onion, garlic, parsley, salt, and pepper.
- Mix until well combined, then form the mixture into 1-inch meatballs.
- Preheat oven to 375Β°F (190Β°C) and line a baking sheet with parchment paper.
- Place meatballs on the baking sheet and bake for 15-20 minutes, or until cooked through.
- In a small saucepan, heat cranberry sauce over low heat to make a glaze, then brush over the meatballs during the last 5 minutes of baking.
- Remove from oven and let cool slightly before serving.
Notes
For a spicier version, add 1/2 teaspoon of red pepper flakes to the mixture. Serve with a side of fresh greens or as appetizers.
