Description

Festive chicken meatballs infused with cranberries, perfect for holiday gatherings, offering a tangy and savory bite.


Ingredients

  • 1 pound ground chicken
  • 1 cup fresh cranberries
  • 1 large egg
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup cranberry sauce for glaze

Instructions

  1. In a large bowl, combine ground chicken, cranberries, egg, breadcrumbs, onion, garlic, parsley, salt, and pepper.
  2. Mix until well combined, then form the mixture into 1-inch meatballs.
  3. Preheat oven to 375Β°F (190Β°C) and line a baking sheet with parchment paper.
  4. Place meatballs on the baking sheet and bake for 15-20 minutes, or until cooked through.
  5. In a small saucepan, heat cranberry sauce over low heat to make a glaze, then brush over the meatballs during the last 5 minutes of baking.
  6. Remove from oven and let cool slightly before serving.

Notes

For a spicier version, add 1/2 teaspoon of red pepper flakes to the mixture. Serve with a side of fresh greens or as appetizers.
