A quick and easy recipe for a creamy chicken pot pie with tender chicken, vegetables, and a flaky crust.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup frozen peas and carrots
  • 1/2 cup chopped onion
  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 3/4 cups chicken broth
  • 2/3 cup milk
  • 2 (9 inch) unbaked pie crusts

Instructions

  1. Preheat oven to 425 degrees F (220 degrees C).
  2. In a saucepan, combine butter, flour, salt, and pepper. Cook until bubbly.
  3. Stir in chicken broth and milk. Bring to a boil, stirring constantly.
  4. Add chicken and vegetables. Mix well.
  5. Pour into a pie crust. Cover with top crust, seal edges, and cut slits in the top.
  6. Bake in the preheated oven for 30-35 minutes, or until golden brown.

Notes

For a crispier crust, brush with egg wash before baking.
