These red velvet cookies are stuffed with a creamy cheesecake filling for an ooey gooey delight.

- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 tablespoon red food coloring
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract for filling
Instructions
- Preheat oven to 350Β°F (175Β°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla and food coloring.
- Gradually add dry ingredients to the wet mixture and mix until combined.
- In a separate bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
- Scoop dough into balls, flatten, add a spoonful of cheesecake mixture in the center, and seal.
- Place on baking sheets and bake for 10-12 minutes. Cool on wire racks.
