Description

Soft and chewy red velvet cookie bars with a hint of cocoa and cream cheese frosting.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 2 tablespoons red food coloring
  • 2 teaspoons vanilla extract
  • 2 tablespoons unsweetened cocoa powder
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • For the frosting: 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the red food coloring and vanilla extract.
  4. In another bowl, whisk together the cocoa powder, flour, salt, and baking soda.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Spread the batter evenly into the prepared pan and bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the bars to cool completely before frosting.
  8. For the frosting: Beat together cream cheese, butter, powdered sugar, and vanilla until smooth, then spread over the cooled bars.
  9. Cut into squares and serve.

Notes

Store in an airtight container for up to 3 days. For a richer flavor, use high-quality cocoa powder.
