  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons red food coloring
  • 1 teaspoon vanilla extract
  • 4 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract for filling

Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.
  3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Beat in the egg, red food coloring, and vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. In a separate bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  6. Scoop tablespoon-sized balls of dough, roll them, and place on the baking sheet. Use your thumb to make an indentation in the center of each ball.
  7. Fill each indentation with about 1 teaspoon of the cream cheese mixture.
  8. Bake for 10-12 minutes or until the edges are set. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.

For best results, ensure the cream cheese is at room temperature to avoid lumps. Store cookies in an airtight container for up to 3 days.
