Ingredients

  • 1 1/2 cups granulated sugar
  • 1 cup vegetable oil
  • 2 large eggs

  • 2 teaspoons vanilla extract
  • 1 tablespoon red food coloring
  • 1 teaspoon white vinegar
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, sliced

Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and grease a 9-inch springform pan.
  2. In a medium bowl, whisk together flour, baking soda, salt, and cocoa powder.
  3. In a large bowl, beat sugar and oil until combined, then add eggs one at a time.
  4. Mix in buttermilk, vanilla, red food coloring, and vinegar.
  5. Gradually add the dry ingredients to the wet mixture and stir until smooth.
  6. Pour the batter into the prepared pan and bake for 25-30 minutes. Let cool completely.
  7. For the cheesecake layer, beat cream cheese, powdered sugar, and vanilla until smooth.
  8. Spread the cheesecake mixture over the cooled red velvet base and top with sliced strawberries.
  9. Refrigerate for at least 2 hours before serving.
