- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 2 cups semi-sweet chocolate chips
- 2 tablespoons shortening
Instructions
- In a large bowl, mix peanut butter and softened butter until smooth.
- Gradually add powdered sugar and vanilla extract, stirring until a dough forms.
- Roll the dough into 1-inch balls and place on a baking sheet lined with parchment paper. Chill in the refrigerator for 30 minutes.
- In a microwave-safe bowl, melt chocolate chips and shortening in 30-second intervals, stirring until smooth.
- Dip each chilled ball into the melted chocolate using a fork, then return to the baking sheet.
- Refrigerate the coated balls for at least 1 hour until set. Serve and enjoy!
Notes
Store in an airtight container in the refrigerator for up to a week. For a nut-free version, substitute with sunflower seed butter.
