  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • Filling:
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1/2 cup fresh lime juice
  • 1 tablespoon lime zest
  • 1 teaspoon vanilla extract
  • Glaze:
  • 1/2 cup fresh lime juice
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lime zest

Instructions

  1. Preheat oven to 325Β°F and grease a 9-inch springform pan.
  2. For the crust: Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan and bake for 10 minutes. Let cool.
  3. For the filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in sour cream, lime juice, lime zest, and vanilla. Pour over crust.
  4. Bake for 50-60 minutes until set. Cool to room temperature, then refrigerate for at least 4 hours.
  5. For the glaze: In a saucepan, combine lime juice, sugar, and cornstarch. Cook over medium heat until thickened. Stir in lime zest and cool slightly. Pour over chilled cheesecake and refrigerate until set.
