- 1 cup cooked corned beef, finely chopped
- 1 cup sauerkraut, drained and squeezed dry
- 1 cup Swiss cheese, shredded
- 1/2 cup cream cheese, softened
- 1/4 cup Thousand Island dressing
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- Salt and pepper to taste
- Oil for frying
Instructions
- In a large bowl, combine the corned beef, sauerkraut, Swiss cheese, cream cheese, and Thousand Island dressing. Mix until well combined.
- Form the mixture into small balls, about 1 inch in diameter, and place them on a baking sheet. Chill in the refrigerator for 30 minutes.
- Set up a breading station: Place flour in one bowl, beaten eggs in another, and panko breadcrumbs in a third.
- Dip each ball first in flour, then in eggs, and finally in panko breadcrumbs, ensuring even coating.
- Heat oil in a deep fryer or large pot to 350Β°F (175Β°C). Fry the fritters in batches for 3-4 minutes, or until golden brown and crispy.
- Remove from oil and drain on paper towels. Serve hot with additional Thousand Island dressing for dipping.
Notes
For a healthier option, bake the fritters at 400Β°F for 15-20 minutes instead of frying. Ensure all ingredients are at room temperature for better mixing.
