- 8 ounces brie cheese, sliced
- 1 large pomegranate, seeds removed

Instructions
- Preheat the oven to 400°F (200°C).
- Toss the beets with olive oil, salt, and pepper, then wrap individually in foil.
- Roast the beets in the oven for 45-50 minutes until tender. Let cool, then peel and slice into rounds.
- Assemble the towers by layering beet slices, brie cheese, and pomegranate seeds on serving plates.
