Description

A stunning appetizer featuring layers of roasted beets, creamy brie cheese, and fresh pomegranate seeds for a sweet and savory flavor.


Ingredients

  • 4 medium beets, washed and trimmed
  • 8 ounces brie cheese, sliced
  • 1 large pomegranate, seeds removed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh mint leaves for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the beets with olive oil, salt, and pepper, then wrap individually in foil.
  3. Roast the beets in the oven for 45-50 minutes until tender. Let cool, then peel and slice into rounds.
  4. Assemble the towers by layering beet slices, brie cheese, and pomegranate seeds on serving plates.
  5. Garnish with fresh mint leaves and serve immediately.

Notes

For best results, use ripe pomegranates and serve chilled or at room temperature.
