- 4 medium beets, trimmed and washed
- 1/4 cup olive oil
- Salt and pepper to taste
- 200g feta cheese
- 1/4 cup heavy cream
- 1/2 cup shelled pistachios, chopped
- 2 cups mixed greens
- 1 tablespoon lemon juice
- Optional: Fresh herbs for garnish
Instructions
- Preheat the oven to 400Β°F (200Β°C).
- Wrap beets in foil and roast for 45-60 minutes until tender.
- Let beets cool, then peel and slice them.
- In a food processor, blend feta and heavy cream until smooth.
- Toss sliced beets with mixed greens, olive oil, lemon juice, salt, and pepper.
- Spread whipped feta on a plate, top with beet mixture, and sprinkle with chopped pistachios.
- Garnish with fresh herbs if desired, and serve immediately.
Notes
For best results, use fresh beets and allow them to cool completely before slicing. This salad can be made ahead and refrigerated.
