Description

A flavorful side dish featuring roasted vegetables with savory bacon, tart cranberries, and creamy feta cheese.


Ingredients

  • 1 pound Brussels sprouts, trimmed and halved
  • 1 medium butternut squash, peeled and cubed
  • 4 slices bacon, chopped
  • 1/2 cup dried cranberries
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400Β°F (200Β°C).
  2. In a large bowl, toss Brussels sprouts and butternut squash with olive oil, salt, and pepper.
  3. Spread the vegetables on a baking sheet and roast for 20 minutes.
  4. Add chopped bacon and cranberries to the baking sheet and roast for another 10-15 minutes until bacon is crispy.
  5. Remove from oven and sprinkle with feta cheese before serving.

Notes

This dish pairs well with poultry. For a vegetarian version, omit the bacon.
