- 4 large carrots, peeled and sliced into 1-inch pieces
- 3 medium beets, peeled and cubed

- 2 tablespoons honey
- Salt and pepper to taste
- 100 grams feta cheese, crumbled

Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the sliced carrots and cubed beets with olive oil, salt, and pepper until evenly coated.
- Spread the vegetables evenly on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly caramelized.
- Drizzle the roasted vegetables with honey and stir to coat.
- Sprinkle crumbled feta cheese over the top.
- Return to the oven for an additional 5 minutes to soften the feta.
- Remove from the oven and garnish with fresh herbs if desired. Serve warm.
