Description

A vibrant mix of roasted carrots and beets, drizzled with honey and topped with crumbled feta for a sweet and savory side dish.


Ingredients

  • 4 large carrots, peeled and cut into 1-inch pieces
  • 3 medium beets, peeled and cut into 1-inch wedges
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • Salt and pepper to taste
  • 1/2 cup crumbled feta cheese
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the carrots and beets with olive oil, salt, and pepper until evenly coated.
  3. Spread the vegetables on a baking sheet in a single layer.
  4. Roast in the preheated oven for 25-30 minutes, or until tender and slightly caramelized, stirring halfway through.
  5. Remove from the oven and drizzle with honey, then sprinkle with feta cheese.
  6. Let cool slightly and garnish with fresh herbs before serving.

Notes

For a vegan version, substitute feta with a plant-based alternative. Best served fresh.
