- 4 large carrots, peeled and cut into 1-inch pieces
- 3 medium beets, peeled and cut into 1-inch wedges
- 2 tablespoons olive oil
- 2 tablespoons honey
- Salt and pepper to taste
- 1/2 cup crumbled feta cheese
- Fresh herbs for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the carrots and beets with olive oil, salt, and pepper until evenly coated.
- Spread the vegetables on a baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes, or until tender and slightly caramelized, stirring halfway through.
- Remove from the oven and drizzle with honey, then sprinkle with feta cheese.
- Let cool slightly and garnish with fresh herbs before serving.
Notes
For a vegan version, substitute feta with a plant-based alternative. Best served fresh.
