Roasted Cranberry and Goat Cheese Flatbread

Description

A delightful flatbread topped with roasted cranberries and creamy goat cheese, perfect for a quick appetizer or light meal.


Ingredients

  • 1 cup fresh cranberries
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 4 ounces goat cheese, crumbled
  • 1 pre-made flatbread or naan
  • 1/4 cup chopped walnuts
  • Salt and pepper to taste
  • Fresh thyme for garnish

Instructions

  1. Preheat the oven to 400Β°F (200Β°C).
  2. Toss the fresh cranberries with olive oil, honey, salt, and pepper in a bowl.
  3. Spread the cranberries on a baking sheet and roast for 15-20 minutes until they burst and caramelize.
  4. Remove from the oven and let cool slightly.
  5. Place the flatbread on a baking sheet and spread the crumbled goat cheese evenly over it.
  6. Top with the roasted cranberries and chopped walnuts.
  7. Bake in the oven for an additional 5-7 minutes until the cheese is melted and the flatbread is crispy.
  8. Remove from the oven, garnish with fresh thyme, and slice into pieces before serving.

Notes

For a sweeter version, add more honey to the cranberries. This pairs well with a glass of white wine.
