- 1 cup fresh cranberries
- 2 tablespoons olive oil
- 1 tablespoon honey
- 4 ounces goat cheese, crumbled
- 1 pre-made flatbread or naan
- 1/4 cup chopped walnuts
- Salt and pepper to taste
- Fresh thyme for garnish
Instructions
- Preheat the oven to 400Β°F (200Β°C).
- Toss the fresh cranberries with olive oil, honey, salt, and pepper in a bowl.
- Spread the cranberries on a baking sheet and roast for 15-20 minutes until they burst and caramelize.
- Remove from the oven and let cool slightly.
- Place the flatbread on a baking sheet and spread the crumbled goat cheese evenly over it.
- Top with the roasted cranberries and chopped walnuts.
- Bake in the oven for an additional 5-7 minutes until the cheese is melted and the flatbread is crispy.
- Remove from the oven, garnish with fresh thyme, and slice into pieces before serving.
Notes
For a sweeter version, add more honey to the cranberries. This pairs well with a glass of white wine.
