Roasted Cranberry and Goat Cheese Flatbread

A festive and easy flatbread topped with sweet roasted cranberries, creamy goat cheese, and fresh herbs.

For the Crust:

  • 1 pre-made flatbread or naan bread
  • 1 cup fresh cranberries
  • 4 oz goat cheese, crumbled
  • 2 tbsp olive oil, divided
  • 1 tbsp honey
  • 1 tsp fresh thyme leaves
  • 1/4 cup chopped red onion
  • 2 tbsp chopped walnuts (optional)
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400Β°F (200Β°C). Toss cranberries with 1 tbsp olive oil and honey on a baking sheet. Roast for 10-12 minutes until they begin to burst.
  2. Place the flatbread on a separate baking sheet. Brush with the remaining 1 tbsp of olive oil and pre-bake for 5 minutes.
  3. Sprinkle the pre-baked flatbread with crumbled goat cheese, roasted cranberries, and red onion. Return to the oven for 8-10 minutes, or until the crust is golden.
  4. Remove from oven, garnish with fresh thyme, optional walnuts, and a drizzle of honey. Season with salt and pepper. Slice and serve immediately.

Notes

You can customize the seasonings to taste.
