Description

Ingredients

  • 2 pounds potatoes, cut into 1-inch chunks
  • 1 head broccoli, cut into florets
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. In a large bowl, toss the potatoes and broccoli with olive oil, garlic, thyme, salt, and pepper.
  3. Spread the mixture evenly on a baking sheet.
  4. Sprinkle Parmesan cheese over the top.
  5. Roast in the preheated oven for 25-30 minutes, or until vegetables are tender and golden brown, stirring halfway through.

Notes

For extra crispiness, broil for the last 2 minutes. Ensure vegetables are dry before roasting to avoid sogginess.
