Instructions
- Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius).
- In a large bowl, toss the potatoes and broccoli with olive oil, garlic, thyme, salt, and pepper.
- Spread the mixture evenly on a baking sheet.
- Sprinkle Parmesan cheese over the top.
- Roast in the preheated oven for 25-30 minutes, or until vegetables are tender and golden brown, stirring halfway through.
Notes
