Description

Chicken breasts stuffed with roasted red peppers, fresh spinach, and mozzarella, then baked to perfection.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups fresh spinach leaves
  • 1 cup roasted red peppers, sliced
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 375Β°F.
  2. Pound chicken breasts to about 1/4-inch thickness.
  3. Season both sides of chicken with salt and pepper.
  4. Layer spinach, roasted red peppers, and mozzarella on each chicken breast.
  5. Roll up the chicken breasts and secure with toothpicks.
  6. Heat olive oil in a skillet over medium heat and sear the chicken rolls for 2-3 minutes per side.
  7. Transfer to a baking dish and bake in the preheated oven for 20-25 minutes, or until chicken is cooked through.

Notes

Ensure toothpicks are removed before serving; pair with a side salad for a complete meal.
