- 4 boneless, skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups fresh spinach leaves
- 1 cup roasted red peppers, sliced
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
Instructions
- Preheat oven to 375Β°F.
- Pound chicken breasts to about 1/4-inch thickness.
- Season both sides of chicken with salt and pepper.
- Layer spinach, roasted red peppers, and mozzarella on each chicken breast.
- Roll up the chicken breasts and secure with toothpicks.
- Heat olive oil in a skillet over medium heat and sear the chicken rolls for 2-3 minutes per side.
- Transfer to a baking dish and bake in the preheated oven for 20-25 minutes, or until chicken is cooked through.
Notes
Ensure toothpicks are removed before serving; pair with a side salad for a complete meal.
