- 2 large sweet potatoes, peeled and sliced thinly
- 3 parsnips, peeled and sliced thinly
- 2 beets, peeled and sliced thinly
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 cup grated cheese
Instructions
- Preheat the oven to 375Β°F (190Β°C).
- In a bowl, mix heavy cream, garlic, thyme, salt, and pepper.
- Layer the sliced sweet potatoes, parsnips, and beets in a greased baking dish.
- Pour the cream mixture over the vegetables and top with grated cheese.
- Cover with foil and bake for 45 minutes.
- Remove foil and bake for an additional 15 minutes until golden and bubbly.
Notes
This dish pairs well with roasted meat. Use a mandoline for even slices.
