Rotisserie Chicken Mushroom Soup

A rich and comforting soup made with savory rotisserie chicken, earthy mushrooms, and a creamy broth.

For the Crust:

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 8 oz cremini mushrooms, sliced
  • 6 cups chicken broth
  • 3 cups shredded rotisserie chicken
  • 1 tsp dried thyme
  • 1/2 cup heavy cream
  • Salt and black pepper to taste
  • 2 tbsp chopped fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and mushrooms. Cook until mushrooms have released their liquid and are browned, about 8-10 minutes.
  3. Pour in the chicken broth and add the shredded chicken and thyme. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Stir in the heavy cream and heat through. Season with salt and pepper to taste.
  5. Ladle into bowls and garnish with fresh parsley before serving.
