For the Crust:
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 8 oz cremini mushrooms, sliced
- 6 cups chicken broth
- 3 cups shredded rotisserie chicken
- 1 tsp dried thyme
- 1/2 cup heavy cream
- Salt and black pepper to taste
- 2 tbsp chopped fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic and mushrooms. Cook until mushrooms have released their liquid and are browned, about 8-10 minutes.
- Pour in the chicken broth and add the shredded chicken and thyme. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Stir in the heavy cream and heat through. Season with salt and pepper to taste.
- Ladle into bowls and garnish with fresh parsley before serving.
