Ingredients

  • 1 loaf rustic bread, sliced
  • 1 cup ricotta cheese
  • 2 cups fresh strawberries, halved
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • Salt to taste
  • Fresh mint for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Toss strawberries with honey and olive oil, then spread on a baking sheet.
  3. Roast strawberries for 15-20 minutes until softened and caramelized.
  4. In a bowl, whip ricotta cheese until smooth and creamy.
  5. Toast bread slices until golden.
  6. Spread whipped ricotta on toasted bread and top with roasted strawberries.
  7. Garnish with fresh mint and serve immediately.
