- 1 pound fresh salmon fillets, cut into chunks
- 2 tablespoons olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sautΓ© until softened, about 5 minutes.
- Add carrots and celery, cook for another 5 minutes.
- Stir in diced tomatoes, vegetable broth, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 10 minutes.
- Add salmon chunks, season with salt and pepper, and simmer for 10-15 minutes until salmon is cooked through.
- Remove bay leaf, garnish with fresh parsley, and serve hot.
Notes
