  • 2 celery stalks, chopped

  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sautΓ© until softened, about 5 minutes.
  3. Add carrots and celery, cook for another 5 minutes.
  4. Stir in diced tomatoes, vegetable broth, thyme, and bay leaf.
