  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder

  • For the Cookie Dough Layer:
  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup milk
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 1/2 cups mini chocolate chips
  • For the Salted Caramel:
  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter, cubed
  • 1/2 cup heavy cream
  • 1 teaspoon sea salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a 9-inch springform pan.
  2. For the brownie layer: In a large bowl, whisk together melted butter and sugar. Add eggs and vanilla, mixing until combined. Stir in flour, cocoa powder, and salt until just combined. Pour into the prepared pan and bake for 25-30 minutes. Let cool.
  3. For the cookie dough layer: In a mixing bowl, cream together softened butter, brown sugar, and granulated sugar. Add milk and vanilla, then mix in flour and salt. Fold in chocolate chips. Spread this over the cooled brownie layer.
  4. For the salted caramel: In a saucepan, melt sugar over medium heat until amber. Add butter and stir until melted, then slowly add cream and salt. Cook for 1 minute, then let cool slightly before pouring over the cookie dough layer.
  5. Refrigerate the cake for at least 2 hours to set. Slice and serve.
