Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup chopped pecans
  • 1/2 cup salted caramel sauce
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs

Instructions

  1. Preheat your oven to 375Β°F (190Β°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, mix the milk, oil, and eggs until well combined.
  4. Stir the wet ingredients into the dry ingredients until just mixed, then fold in the pecans and caramel sauce.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  7. Allow to cool in the tin for 5 minutes, then transfer to a wire rack.

Notes

For extra flavor, sprinkle sea salt on top before baking. Store in an airtight container for up to 3 days.
