Description

A vibrant marinade featuring lime, chili, and spices for grilled chicken with a San Antonio flair.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup fresh lime juice
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro

Instructions

  1. In a bowl, whisk together lime juice, olive oil, garlic, chili powder, cumin, salt, and pepper.
  2. Place chicken breasts in a resealable plastic bag and pour the marinade over them.
  3. Seal the bag and refrigerate for at least 1 hour, or up to 4 hours for more flavor.
  4. Preheat grill to medium-high heat.
  5. Remove chicken from marinade and grill for 6-7 minutes per side, or until internal temperature reaches 165Β°F.
  6. Let rest for 5 minutes before serving.

Notes

For a spicier version, add cayenne pepper to the marinade. Pairs well with rice and beans.
