A vibrant marinade featuring lime, chili, and spices for grilled chicken with a San Antonio flair.
Ingredients

- 4 boneless, skinless chicken breasts
- 1/2 cup fresh lime juice
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup chopped fresh cilantro
Instructions
- In a bowl, whisk together lime juice, olive oil, garlic, chili powder, cumin, salt, and pepper.
- Place chicken breasts in a resealable plastic bag and pour the marinade over them.
- Seal the bag and refrigerate for at least 1 hour, or up to 4 hours for more flavor.
- Preheat grill to medium-high heat.
- Remove chicken from marinade and grill for 6-7 minutes per side, or until internal temperature reaches 165Β°F.
- Let rest for 5 minutes before serving.
Notes
For a spicier version, add cayenne pepper to the marinade. Pairs well with rice and beans.
