- 8 slices of white bread, crusts removed
- 8 breakfast sausage links, cooked
- 2 eggs
- 1/2 cup milk
- 1 tablespoon sugar
- 1 teaspoon vanilla extract
- Butter for frying
Instructions
- Flatten the bread slices with a rolling pin.
- Place a cooked sausage link on each flattened bread slice and roll it up tightly.
- In a shallow bowl, whisk together eggs, milk, sugar, and vanilla extract.
- Dip each roll-up into the egg mixture, coating all sides.
- Heat butter in a skillet over medium heat and fry the roll-ups until golden brown on all sides, about 2-3 minutes per side.
- Serve warm with maple syrup.
Notes
These are best served fresh and hot. You can use turkey sausage for a lighter version.
