Ingredients

- 1 pound smoked sausage, sliced
- 4 medium potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add sliced sausage and cook until browned, about 5 minutes.
- Add diced potatoes, onion, garlic, and bell pepper to the skillet.
- Season with salt and pepper.
- Cover and cook for 15-20 minutes, stirring occasionally, until potatoes are tender.
- Serve hot.
Notes
For a spicier version, use hot sausage and add red pepper flakes.
