- 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup BBQ sauce
- 1/4 cup honey
- 2 tablespoons soy sauce
- 2 cups cooked white or brown rice
- 1 cup broccoli florets, steamed
- 1 cup bell peppers, sliced
- 1 cup carrots, shredded
- 1/4 cup green onions, chopped
- Salt and pepper to taste
- Oil for cooking
Instructions
- In a bowl, mix BBQ sauce, honey, and soy sauce. Add chicken pieces and marinate for 30 minutes.
- Cook rice according to package instructions and set aside.
- Heat oil in a skillet over medium-high heat. Add marinated chicken and cook for 6-8 minutes until cooked through.
- In the same skillet, add steamed broccoli, bell peppers, and carrots. Sauté for 2-3 minutes.
- Serve chicken and vegetables over rice, garnish with green onions.

Notes
For extra flavor, grill the chicken instead of sautéing. Adjust honey for sweetness. Leftovers store well in the fridge for up to 2 days.
