Scrumptious Chicken Broccoli Rice Casserole

A comforting and creamy one-dish meal featuring tender chicken, fresh broccoli, and rice in a rich, cheesy sauce.

For the Crust:

  • 2 cups cooked chicken, shredded
  • 2 cups broccoli florets, steamed
  • 1 cup long-grain white rice, uncooked
  • 1 (10.5 oz) can cream of chicken soup
  • 1 cup sour cream
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1/2 cup milk
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. In a large bowl, combine the cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and pepper. Mix until smooth.
  3. Stir in the cooked chicken, steamed broccoli, uncooked rice, and 1 cup of the shredded cheddar cheese until everything is evenly coated.
  4. Pour the mixture into the prepared baking dish and spread it into an even layer. Cover tightly with foil.
  5. Bake for 30 minutes. Remove the foil, top with the remaining 1/2 cup of cheese, and bake uncovered for another 10-15 minutes, or until the cheese is bubbly and the rice is tender. Let stand for 5 minutes before serving.
