Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups cooked rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. In a bowl, toss the shrimp with olive oil, chili powder, cumin, salt, and pepper.
  2. Heat a skillet over medium heat and cook the shrimp for 2-3 minutes per side until pink and opaque.
  3. Assemble the bowls by layering cooked rice, black beans, corn, cooked shrimp, avocado slices, and cherry tomatoes.
  4. Garnish with fresh cilantro and serve with lime wedges.

Notes
