Crispy, golden-brown shrimp patties served with a zesty and creamy homemade chili-lime mayonnaise.

For the Crust:
- 1 lb raw shrimp, peeled, deveined, and finely chopped
 - 1/2 cup panko breadcrumbs
 - 1 large egg, lightly beaten
 - 2 green onions, finely sliced
 - 2 cloves garlic, minced
 - 1 tbsp fresh cilantro, chopped
 - 1 tsp smoked paprika
 - 1/2 tsp salt
 - 1/4 tsp black pepper
 - 2 tbsp vegetable oil for frying
 - 1/2 cup mayonnaise
 - 1 tbsp sriracha or chili garlic sauce
 - 1 tsp lime zest
 - 1 tbsp fresh lime juice
 
Instructions
1. Prepare the Crust:
- In a medium bowl, combine the chopped shrimp, panko, egg, green onions, garlic, cilantro, paprika, salt, and pepper. Mix until well combined.
 - Form the mixture into 8 equal-sized patties, about 1/2-inch thick.
 - Heat the vegetable oil in a large skillet over medium heat. Cook the patties for 3-4 minutes per side, until golden brown and cooked through.
 - While the patties cook, make the chili-lime mayo by whisking together the mayonnaise, sriracha, lime zest, and lime juice in a small bowl.
 - Serve the hot shrimp patties immediately with a dollop of the chili-lime mayo.
