Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 cups cooked rice
  • 1/4 cup mayonnaise
  • 1 tablespoon sriracha sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 avocado, sliced
  • 1 cucumber, sliced
  • Salt and pepper to taste

Instructions

  1. Cook rice according to package instructions and set aside.
  2. In a bowl, mix mayonnaise, sriracha, soy sauce, and garlic powder to make the spicy mayo.
  3. Season shrimp with salt and pepper, then cook in a skillet over medium heat for 3-4 minutes until pink.
  4. Assemble bowls by layering rice, shrimp, avocado, and cucumber.
  5. Drizzle with spicy mayo and serve immediately.

Notes

For a spicier version, add more sriracha. This recipe is gluten-free if using tamari instead of soy sauce.
