- 1 pound large shrimp, peeled and deveined
- 8 ounces linguine or spaghetti
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/2 cup dry white wine
- 1/4 teaspoon red pepper flakes
- Juice of 1 lemon
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped
- For Garlic Bread:
- 1 baguette, sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
Instructions
- Step 1: Cook the pasta according to package instructions until al dente. Drain and set aside.
- Step 2: In a large skillet, melt 2 tablespoons of butter over medium heat. Add minced garlic and red pepper flakes, sautΓ© for 1-2 minutes until fragrant.
- Step 3: Add the shrimp to the skillet and cook for 2-3 minutes on each side until pink and opaque. Remove shrimp and set aside.
- Step 4: Pour in the white wine and lemon juice, scraping the bottom of the skillet. Let it simmer for 2-3 minutes to reduce.
- Step 5: Stir in the remaining butter until melted and the sauce is creamy. Return the shrimp to the skillet and toss to coat.
- Step 6: For the garlic bread, preheat oven to 375Β°F. Brush baguette slices with olive oil and sprinkle with minced garlic. Bake for 5-7 minutes until golden.
- Step 7: Serve the shrimp scampi over the cooked pasta in bowls, garnished with parsley, and accompany with garlic bread.
Notes
For a healthier option, use whole wheat pasta. Ensure shrimp is fresh for the best flavor.
