- 500g ripe tomatoes, chopped
- 100g blanched almonds
- 2 garlic cloves, peeled
- A handful of fresh basil leaves
- 100ml extra-virgin olive oil
- Salt to taste
Instructions
- Blanch the tomatoes in boiling water for 1 minute, then peel and chop them.
- Toast the almonds in a dry pan over medium heat for 3-4 minutes until golden.
- In a food processor, combine the chopped tomatoes, toasted almonds, garlic cloves, and basil leaves.
- Blend until smooth, gradually adding the olive oil to reach desired consistency.
- Season with salt to taste and blend for another 30 seconds.
