Description

Ingredients

  • 500g ripe tomatoes, chopped
  • 100g blanched almonds
  • 2 garlic cloves, peeled
  • A handful of fresh basil leaves
  • 100ml extra-virgin olive oil
  • Salt to taste

Instructions

  1. Blanch the tomatoes in boiling water for 1 minute, then peel and chop them.
  2. Toast the almonds in a dry pan over medium heat for 3-4 minutes until golden.
  3. In a food processor, combine the chopped tomatoes, toasted almonds, garlic cloves, and basil leaves.
  4. Blend until smooth, gradually adding the olive oil to reach desired consistency.
  5. Season with salt to taste and blend for another 30 seconds.
