- 2 pounds boneless, skinless chicken thighs
- 4 medium carrots, sliced
- 3 celery stalks, chopped
- 1 large onion, diced
- 3 garlic cloves, minced
- 4 cups chicken broth
- 2 potatoes, cubed
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup frozen peas
Instructions
- Step 1: Place chicken thighs at the bottom of the slow cooker.
- Step 2: Add carrots, celery, onion, garlic, potatoes, thyme, salt, and pepper on top of the chicken.
- Step 3: Pour chicken broth over the ingredients.
- Step 4: Cover and cook on low for 6-8 hours or until chicken is tender.
- Step 5: Stir in frozen peas during the last 30 minutes of cooking.
- Step 6: Shred chicken with forks and stir before serving.
Notes
For a thicker stew, add a cornstarch slurry at the end.
