Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 4 medium carrots, sliced
  • 3 celery stalks, chopped
  • 1 large onion, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 2 potatoes, cubed
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup frozen peas

Instructions

  1. Step 1: Place chicken thighs at the bottom of the slow cooker.
  2. Step 2: Add carrots, celery, onion, garlic, potatoes, thyme, salt, and pepper on top of the chicken.
  3. Step 3: Pour chicken broth over the ingredients.
  4. Step 4: Cover and cook on low for 6-8 hours or until chicken is tender.
  5. Step 5: Stir in frozen peas during the last 30 minutes of cooking.
  6. Step 6: Shred chicken with forks and stir before serving.

Notes

For a thicker stew, add a cornstarch slurry at the end.
