- 2 lbs beef chops
- 4 large potatoes, peeled and cubed
- 1 lb carrots, sliced
- 1 cup beef broth
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/4 cup flour for gravy
Instructions
- Season beef chops with salt and pepper, then sear in a pan with olive oil until browned.
- Remove chops and in the same pan, sautรฉ onions and garlic until soft.
- Add flour to make a roux, then slowly stir in beef broth to create gravy.
- Return chops to the pan and simmer for 30 minutes until tender.
- Boil potatoes until soft, then mash with butter and milk for creamy texture.
- Toss carrots in oil, salt, and pepper, then roast in the oven at 400ยฐF for 20-25 minutes.
- Serve chops smothered in gravy, with mashed potatoes and roasted carrots on the side.
Notes
For a richer flavor, use homemade beef broth. Ensure chops are fully cooked to avoid any food safety issues.
