Description

A comforting dish featuring tender chicken smothered in a savory gravy served over fluffy rice.


Ingredients

  • 2 cups long-grain rice
  • 4 boneless, skinless chicken thighs
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup all-purpose flour
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a large pot, bring 4 cups of water to a boil, add the rice, reduce heat, and simmer for 15-20 minutes until tender.
  3. Season the chicken thighs with salt and pepper.
  4. In a skillet, heat the vegetable oil over medium heat.
  5. Dredge the chicken in flour and brown on both sides for 5 minutes.
  6. Add the sliced onion and minced garlic to the skillet, cooking until softened.
  7. Pour in the chicken broth, cover, and simmer for 20-25 minutes until the chicken is cooked through and the sauce thickens.
  8. Serve the smothered chicken over the cooked rice.

Notes

For a creamier sauce, add 1/2 cup of heavy cream in the last 5 minutes of cooking.
