Ingredients

- 2 cups long-grain rice
- 4 boneless, skinless chicken thighs
- 1 large onion, sliced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup all-purpose flour
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a large pot, bring 4 cups of water to a boil, add the rice, reduce heat, and simmer for 15-20 minutes until tender.
- Season the chicken thighs with salt and pepper.
- In a skillet, heat the vegetable oil over medium heat.
- Dredge the chicken in flour and brown on both sides for 5 minutes.
- Add the sliced onion and minced garlic to the skillet, cooking until softened.
- Pour in the chicken broth, cover, and simmer for 20-25 minutes until the chicken is cooked through and the sauce thickens.
- Serve the smothered chicken over the cooked rice.
Notes
For a creamier sauce, add 1/2 cup of heavy cream in the last 5 minutes of cooking.
