These cookies are soft, chewy, and packed with pistachio flavor from the pudding mix.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 package (3.4 oz) instant pistachio pudding mix
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chopped pistachios
  • 1/2 cup white chocolate chips

Instructions

  1. Preheat oven to 350°F.
  2. In a bowl, whisk together flour and baking soda.
  3. In another bowl, cream butter and sugars until light and fluffy.
  4. Beat in pudding mix, eggs, and vanilla.
  5. Gradually add flour mixture and stir to combine.
  6. Fold in pistachios and white chocolate chips.
  7. Drop dough by spoonfuls onto baking sheets.
  8. Bake for 10-12 minutes or until edges are golden.
