Description

These soft and gooey mint chocolate chip cookies are a delightful treat with a refreshing mint flavor combined with rich chocolate chips, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 teaspoon mint extract
  • 2 large eggs
  • 1 1/2 cups mint chocolate chips

Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the vanilla extract, mint extract, and eggs one at a time.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the mint chocolate chips.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack.

Notes

For a stronger mint flavor, increase the mint extract to 1.5 teaspoons. Store in an airtight container for up to 5 days.
