These irresistibly soft cookies combine the creamy tang of cheesecake with sweet, fruity strawberry flavor in every bite.

For the Crust:

  • 1 cup (2 sticks) unsalted butter, softened
  • 4 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips
  • 3/4 cup freeze-dried strawberries, crushed

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, cream cheese, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs and vanilla extract.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Fold in the white chocolate chips and crushed freeze-dried strawberries until evenly distributed throughout the cookie dough.
  5. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are just set and the centers are still soft.
  6. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
