- 1 cup yellow cornmeal
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 1/4 cup melted butter
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced jalapenos
Instructions
- Preheat your oven to 400Β°F (200Β°C) and grease a mini muffin tin.
- In a large bowl, whisk together cornmeal, flour, baking powder, and salt.
- In another bowl, mix buttermilk, egg, and melted butter until well combined.
- Stir the wet ingredients into the dry ingredients until just mixed, then fold in cheese and jalapenos.
- Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 15-20 minutes or until golden brown and a toothpick inserted comes out clean.
- Let cool for 5 minutes before removing from the tin and serving warm.
Notes
For a spicier version, add more jalapenos or include some cayenne pepper. These poppers are best served fresh but can be stored in an airtight container for up to 2 days.
