These irresistible bite-sized cornbread poppers are a Southern delight, perfect for appetizers or snacks, featuring a crispy exterior and fluffy interior.


Ingredients

  • 1 cup yellow cornmeal
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 1/4 cup melted butter
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced jalapenos

Instructions

  1. Preheat your oven to 400Β°F (200Β°C) and grease a mini muffin tin.
  2. In a large bowl, whisk together cornmeal, flour, baking powder, and salt.
  3. In another bowl, mix buttermilk, egg, and melted butter until well combined.
  4. Stir the wet ingredients into the dry ingredients until just mixed, then fold in cheese and jalapenos.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  6. Bake for 15-20 minutes or until golden brown and a toothpick inserted comes out clean.
  7. Let cool for 5 minutes before removing from the tin and serving warm.

Notes

For a spicier version, add more jalapenos or include some cayenne pepper. These poppers are best served fresh but can be stored in an airtight container for up to 2 days.
