For the Crust:
- 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
- 1/4 cup gochujang (Korean chili paste)
- 2 tbsp soy sauce
- 2 tbsp honey or brown sugar
- 4 cloves garlic, minced
- 1 tsp grated ginger
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 cup shredded mozzarella cheese
- 2 green onions, thinly sliced
- 1 tbsp toasted sesame seeds
- Cooked rice, for serving
Instructions
1. Prepare the Crust:
- In a bowl, whisk together the gochujang, soy sauce, honey, minced garlic, grated ginger, rice vinegar, and sesame oil to create the marinade.
- Add the chicken pieces to the marinade, ensuring they are fully coated. Let it marinate for at least 15 minutes (or up to an hour for more flavor).
- Preheat your oven’s broiler. In a large, oven-safe skillet over medium-high heat, cook the marinated chicken for 6-8 minutes, until cooked through and the sauce has thickened.
- Sprinkle the shredded mozzarella cheese evenly over the cooked chicken. Transfer the skillet to the oven and broil for 2-3 minutes, or until the cheese is fully melted and golden brown.
- Remove from the oven. Garnish with sliced green onions and toasted sesame seeds. Serve immediately over steamed rice.
