- 2 packs of ramen noodles
- 1 can of coconut milk
- 2 tablespoons of red curry paste
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 cup of vegetable broth
- 1 tablespoon of soy sauce
- 1 teaspoon of ginger, grated
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Boil the ramen noodles according to package instructions, then drain and set aside.
- In a large pot, sautΓ© the chopped onion, garlic, and ginger until fragrant.
- Add the red curry paste and stir for 1 minute.
- Pour in the coconut milk and vegetable broth, then bring to a simmer.
- Add the sliced red bell pepper and soy sauce, and cook for 5 minutes.
- Add the cooked noodles to the pot and mix well.
- Serve hot, garnished with fresh cilantro and lime wedges.
Notes
