Ingredients

  • 2 packs of ramen noodles
  • 1 can of coconut milk
  • 2 tablespoons of red curry paste
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 cup of vegetable broth
  • 1 tablespoon of soy sauce
  • 1 teaspoon of ginger, grated
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Boil the ramen noodles according to package instructions, then drain and set aside.
  2. In a large pot, sautΓ© the chopped onion, garlic, and ginger until fragrant.
  3. Add the red curry paste and stir for 1 minute.
  4. Pour in the coconut milk and vegetable broth, then bring to a simmer.
  5. Add the sliced red bell pepper and soy sauce, and cook for 5 minutes.
  6. Add the cooked noodles to the pot and mix well.
  7. Serve hot, garnished with fresh cilantro and lime wedges.
