- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tablespoon ginger, grated
- 2 tablespoons red curry paste
- 1 can (14 oz) coconut milk
- 4 cups vegetable broth
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 8 oz ramen noodles
- 1 cup carrots, julienned
- 1 cup spinach
- Fresh cilantro for garnish
- Sliced green onions for garnish
Instructions
- Heat coconut oil in a large pot over medium heat.
- Add onion, garlic, and ginger; sautΓ© until fragrant, about 2-3 minutes.
- Stir in red curry paste and cook for another minute.
- Pour in coconut milk, vegetable broth, soy sauce, and lime juice; bring to a simmer.
- Add ramen noodles and carrots; cook until noodles are tender, about 5 minutes.
- Stir in spinach and cook until wilted.
- Serve hot, garnished with cilantro and green onions.
Notes
Adjust spiciness by adding more curry paste if desired. Pairs well with a side of bread.
