Ingredients

  • 2 tablespoons coconut oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons red curry paste
  • 1 can (14 oz) coconut milk
  • 4 cups vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 8 oz ramen noodles
  • 1 cup carrots, julienned
  • 1 cup spinach
  • Fresh cilantro for garnish
  • Sliced green onions for garnish

Instructions

  1. Heat coconut oil in a large pot over medium heat.
  2. Add onion, garlic, and ginger; sautΓ© until fragrant, about 2-3 minutes.
  3. Stir in red curry paste and cook for another minute.
  4. Pour in coconut milk, vegetable broth, soy sauce, and lime juice; bring to a simmer.
  5. Add ramen noodles and carrots; cook until noodles are tender, about 5 minutes.
  6. Stir in spinach and cook until wilted.
  7. Serve hot, garnished with cilantro and green onions.

Notes

Adjust spiciness by adding more curry paste if desired. Pairs well with a side of bread.
