A refreshing and spicy Korean cucumber salad with a twist of bold flavors.
Ingredients

- 2 large cucumbers, thinly sliced
- 1 tablespoon gochujang (Korean chili paste)
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- 1 teaspoon sesame oil
- 2 cloves garlic, minced
- 1 green onion, chopped
- 1 teaspoon sesame seeds
- Salt to taste
Instructions
- In a bowl, mix gochujang, rice vinegar, sugar, sesame oil, and minced garlic to make the sauce.
- Add the sliced cucumbers to the sauce and toss until well coated.
- Sprinkle with chopped green onion and sesame seeds.
- Let it sit for 10 minutes to marinate.
- Serve chilled.
Notes
For a milder version, reduce the amount of gochujang. This salad pairs well with grilled meats.
