Description

A refreshing and spicy Korean cucumber salad with a twist of bold flavors.


Ingredients

  • 2 large cucumbers, thinly sliced
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 green onion, chopped
  • 1 teaspoon sesame seeds
  • Salt to taste

Instructions

  1. In a bowl, mix gochujang, rice vinegar, sugar, sesame oil, and minced garlic to make the sauce.
  2. Add the sliced cucumbers to the sauce and toss until well coated.
  3. Sprinkle with chopped green onion and sesame seeds.
  4. Let it sit for 10 minutes to marinate.
  5. Serve chilled.

Notes

For a milder version, reduce the amount of gochujang. This salad pairs well with grilled meats.
