- 1 cup Monterey Jack cheese, shredded
- 2 bell peppers, sliced
- 1 jalapeno pepper, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon chili powder

- 1 tablespoon olive oil
Instructions
- Preheat oven to 375Β°F.
- In a skillet, heat olive oil over medium heat.
- Add onion, garlic, and peppers; sautΓ© until softened.
- Season chicken with chili powder, salt, and pepper.
- Place chicken in a baking dish and top with sautΓ©ed vegetables and cheese.
- Bake for 25-30 minutes until chicken is cooked through.
- Let rest for 5 minutes before serving.
Notes
